Ingredients

  • For the salad: 
  • 4 carrots
  • 200 g of chickpeas
  • 150 g of sweetcorn kernels
  • 125g of cherry tomatoes
  • 2 handfuls of rocket
  • 1 red onion
  • 80 g of Germain Epoisses
  • A few sprigs of fresh basil and thyme
  • For the vinaigrette :
  • 2 tbsp of olive oil
  • 1/2 tsp of mustard
  • 1/4 of lemon juice
  • Freshly ground salt and pepper

Preparation

    Grate the carrots, wash the cherry tomatoes and cut them in half, then cut the onion into slivers.

    Into the two bowls, placed side by side, place the grated carrot, the chickpeas, the cherry tomatoes, the Epoisses cut into thin strips, the rocket then the sweetcorn.

    Prepare the vinaigrette by emulsifying all the ingredients together then distribute it between the 2 bowls, finally add some fresh herbs over the top.
