The Epoisses Sélection Affineur Germain is a cow’s milk cheese washed with Marc de Bourgogne according to the
traditional methods of cheesemakers. The particular aging method of Époisses Sélection Affineur gives it a more colourful rind and characteristic flavour than normally expected of Epoisses. It has a powerful woodsy aroma and thanks to its creamy centre, a typical taste.

Epoisses was granted CDO in 1991 then PDO in 1996.
It is named  after the village of Epoisses, located in the East of France.
